WHAT ARE THE DOP AND IGP CERTIFICATIONS
The DOP mark is a quality food certification whose abbreviation means "Denomination of Protected Origin"; the IGP mark is another quality food certification whose abbreviation means "Protected Geographical Indication". The PDO mark is issued to foods whose quality characteristics depend essentially or exclusively on the territory in which they were produced. Thus, the combination of natural and human factors makes it impossible to reproduce a DOP product outside a certain geographical area. Furthermore, in a DOP product, all the raw materials and all the production phases must be strictly carried out in a defined geographical area.
The IGP mark is very similar to the DOP, it differs only in having slightly more lax production rules. For example, the IGP mark does not guarantee that all the production phases of a product are carried out in a certain geographical area, but only some phases; and does not guarantee that all the raw materials of a product come exclusively from a certain geographical area, but only some of these raw materials.
